Don't have a heart attack - two posts in one day!!
Many people know that I enjoy cooking, though I haven't been doing it as much over the past few months as I would like to. It's hard to find that balance between working and cooking that doesn't mean we're eating at 8:30 at nite. It is also a well know fact that 99% of what I cook comes from Cooking Light magazine. I rarely have a bad recipe experience with them. And I've been collecting and perusing the magazine for enough years (since 1998) that I can read a recipe and judge how easy it will be to cook and whether or not it's a reasonable week-night meal.
For a while now, I've been wanting to publish a list of my favorite recipe finds from the mag, but haven't gotten a chance to. Yeah, still not happening. However, I would like to share this recipe because it's very easy and was a big hit with me and Husband. So check it out and give a whirl:
Sausage and Spinach Soup
One of the online reviews suggested that if you want to use dried herbs, add them with the tomatoes so they have time to release flavor into the soup. I bought a 19 oz package of sausage and just used three of the five links. And I don't like huge chunks of cooked tomato (any chunks of cooked tomato are an accomplishment for me) so I cut up the stewed tomatoes, but you could also run them through a blender or food processor.
